We raise heritage pigs with heritage methodology. Forests, pastures and in between, these hogs are encouraged and commended on their forage-ability. Often, when checking on them, we will see a succession of dirt-covered faces arise to greet us. They get busy eating roots, grubs, leaves and grasses. Our retirement plan is that they will find groves of truffles for us.
All smoking and curing is done with a natural cure, containing salt, sugar and celery powder, NO CHEMICAL NITRATES.
